Enjoying is the best part. I love to sit under an umbrella on the porch and just watch things grow.
I just had to try an idea on a link given by Pepperdude to make a self-watering growing pot. I cut a 2l soda bottle in half, filling bottom with water and filling the top with dirt. I put in a cucumber in one, so we'll see how it works. If your potato plant works, I'll do that one next time.
