Sandwiches, Norwegian Style

Today was Kolbjørns birthday, so I set to work in the kitchen. I was all prepared to make him his favorite dish for dinner tonight, but he insisted he wanted sandwiches. Okay. Works for me. So I went to see what we had so I could make some special sandwiches for his birthday. So come on over, your invited to sample some of the birthday boys dinner.

Here is what I came up with for Kolbjørns dinner. Sandwiches, Potet Salad and Kake.

The first sandwich is avacado slices with a healthy spoon of sour cream, fresh boiled shrimps (that i had froze, so not so fresh anymore) a cucumber slice with dill and chives from my garden.

The next sandwich is Crab Salad, with tomato (greenhouse from Lofoten) and a sprig of parsley from garden.

The last sandwich is Caraway Cheese that i had made, topped with a slice of hard cooked egg, sour cream with chives and a sprig of dill.

Potato Salad with flowers (kind of) since ours are all gone now, i had to make some food ones.

Mørslefse and Lefse spread with a cinnamon filling in both lefses. I didn't make these today, i just took them out of the freezer. The Mørslefse is the darker of the 2.

And when that was all over we finally dug into the cake. Kolbjørn said he wanted something different after 46 yrs of eating cream cakes. So i made him a Boston Creme, with a Norwegian twist. It has 3 layers of cake, vanilla pudding, and a Ganache type of Chocolate/coffee icing. Made almost like a creme cake. Minus the whipped cream and fruit. This is what was left after Kolbjørn, Balder and myself attacked it.

I'm so full.

Toni, tell Randy, that a real viking eats mostly fish for a diet, about 80%, the rest is mountain sheep, goat and boar. lol. Shoot they lived mostly near or on the water,,,lol. They used to carry around with them, dried fish flakes, and when they got hungry they would pull some out and eat it like that. They still eat that here today. But we mostly sell that to the tourist,,,lol.

Since i have tried that recipe, its the only one i use now. Its so easy to make, and takes little effort. Theres the video, but the recipe follows down a little lower.

Lefse is kind of like a huge tortilla, i don't know how else to explain it. Theres a few different kinds like this. plain, potato ect. And cooked in a huge lefse skillet or on a huge piece of flat iron over an open fire. Mine is done on a lefse skillet. Griddle!! Thats the word. Mørslefse is more kake like, but made into huge rounds also, but baked in the oven. Both are spread with butter, cinnamon and sugar. the Lefse is folded and the Mørslefse is 2 put together, then cut into strips, then wedges.

Sjoerd, i think if you was here, there would of been alot of growling going on,,,lol. Then i would have had to tell KB to behave himself....lol. Ofcourse you and the Mrs, are always invited, i just would of been in my glory making more is all.

When i got up this morning, KB was up drinking coffee and with a huge slice of cake, grinning ear to ear. Geez that man loves to eat! But he will go work it off in a few hours.
