I know how to 'quote' something, but how do you 'quote' only a sentence or two of someone's post, without it capturing the complete post?

You have to capture the complete post, then highlight the part you don't want and click Delete.

Toni's directions are great. As long as you don't remove the [quote][/quote] parts of the quoted post it'll work fine.
