I was wondering how do you preserve your corn. I usually cut mine off the cob and freeze. Is there any other way to preserve corn without freezing? Can I put it in mason jars?

I leave it in the shuck and put it in the freezer in gallon bags and take out as many ears as I need.No cutting off the ears until ready to cook.It taste like its fresh picked corn.

I preserve mine in the shuck with plastic wrap AND with the shucks removed but wrapped in alu foil and plastic wrap. I find that the result is the same in terms of the quality of the kernels. I usually do more out of the shucks than in the shucks because they take-up less place in the freezer.
When it's time to eat the, I thaw it in the microwave then cut it from the cob and then cook it for the meal.
I really like the flavour and texture of it then...almost as good as the day I picked it.
Good luck to you.
