I have a recipe for a great yeast bread made with winter squash. I use butternut squash but any type can be used. I've used Hubbard or Buttercup.
Squash Bread
2 packages active dry yeast (4 ½ tsps)
1 tsp sugar
1/8 tsp ginger
¼ cup water
1 ¼ cups cooked and mashed winter squash ( I use butternut)
1 cup milk
1/3 cup packed brown sugar (I substitute honey)
1 egg, slightly beaten
2 tsp. Salt
6 cups flour, approx.
1. Dissolve yeast, 1 tsp sugar and ginger into ¼ cup warm water; let stand until bubbly.
2. Combine squash, milk, sugar or honey, butter, egg and salt in large bowl. Stir in the yeast mixture.
3. Mix in enough of the flour to make a dough easy to handle. Turn dough on to a lightly floured surface.
4. Knead until smooth and elastic. (about 10 min.) Place in greased bowl; turn greased side up. Cover; let rise in a warm place until double (about 1 hour)
5. Punch dough down, divide into six parts. Shape each part into a 14 inch long roll. Braid 3 rolls together and place in a greased 9 x 5 x 3 inch pan. Cover; let rise in warm place until double (about 1 hour)
6. Heat oven to 350 degs. Bake until golden, about 35 minutes. Remove from pan. Cool on wire racks.
Makes 2 loaves

No, I didn't keep it all. I made it for a reason. Yesterday at the farmer's market Rick had butternut squash. People were asking what you did with it. How do you cook it? I kept telling them to make bread. They had never heard of squash bread. So, I bought one and came home, cooked it and made squash bread. Today, I took a loaf to the farmer's market and cut it into slices and then half slices and we offered everyone who stopped a piece of it. Rick sold all of his squash. We gave away all the copies of the recipe that I printed out on the computer. We have one and I put one in the freezer. Brian likes it as well or better than any other that I make and it makes great toast. dooley

I know the folks that got samples loved it. What a nice thing to do, giving samples and a copy of the recipe. You and dr are quickly becoming a main event of the flea market. Well done, dooley and dr.

Bet Rick was glad you brought the bread too so he sold all his squash. Poor Glenda (LOL!!!).

Rick was happy because he got to take the little that was left home along with the recipe so he could get his wife to make him a whole loaf for himself. He'll eat her loaf too if he gets the chance. He really liked it. He was good today and didn't sample all of it himself. dooley

Pumpkin is like winter squash so I don't see why it wouldn't work. Don't season it like pie though. Well, maybe yeast bread that tasted like pumpkin pie wouldn't be too bad. Pumpkin might be a little more moist so drain it good or maybe use a tiny bit less. Let me know how it works! dooley

wow dooley! what a great idea! i am definitely going to try your recipe out this week.
super idea about giving samples out at market. we do the same, and the customers really appreciate it, especially with produce they have never had before like tomatilloes and such.
