The black bean and swiss cheese peppers sound wonderful. I've got to try that. I'd probably mash the beans andd some onion and garlic and cheese with more cheese on the top. Is that your method or do you do something different.?
I have to make hubby classic stuffed peppers with ground beef, rice, tomatoes etc. The man thinks I garden just to make him stuffed peppers every summer.
Anyway, I also make one that's stuffed with canned salmon, mashed potatoes, onion and garlic. I put a little cheddar on the top of those. These freeze well too.
Shouldn't I be posting this in cooking? Oh well.
