I am making a chicken and andouille gumbo. I baked 2 chickens last night and they don't always get eaten, so the leftovers, plus a little more chicken and the andouille are all going into a pot for gumbo. I forgot the smoked turkey necks but I think it will taste ok. Gumbo is really a mixture anyway, and a good way to use your leftovers. I probably never make it the same , always something about it a little different. What are you cooking today?

I don't know what yet, but whatever it is will be cooked in the crock pot. Way too hot here to turn on the oven.
I take that back, I do know what...I have a crockpot meal in a bag out in the freezer, Beef Stroganoff. Better get that started.

Chicken with Potatoes & Peppers
cooked in the crockpot because like Toni said it too hot to use the oven!!
I found this recipe in one of my many cookbooks and it is delicious and so easy!!

1/4 cup italian dressing
boneless skinless chicken breast
1 can (28 ounces)whole peeled tomatoes (I like to use fresh from my garden tomatoes!)
1 pound all-purpose potatoes cut in chunks(reds are the best)
2 medium onions,cut in quarters
2 medium bell pepper,cut into thin strips
1 tablespoon rosemary(I usually use fresh from my garden!)
1 teaspoon thyme leaves(again fresh from my garden)
1 teaspoon salt
1/4 teaspoon pepper

In skillet brown chicken in italian dressing ,set aside.
Combine remaining ingredients in crockpot; add browned chicken and turn to coat.Cook in crock pot until chicken is done and veggies are tender. I usually cook mine on high for about 6 hours are so.

We're having a fresh uncooked tomato sauce. It's a Jaque Pepin recipe that we love. Peeled seeded tomatos, fresh basil, pressed garlic, salt and pepper, parsely(if the caterpillars aren't on it)and a generous slurp of extra virgin olive oil. It sits on the counter for several hours to macerate. Then you toss it with hot cooked spaghetti noodles. The leftover makes a good salsa also.
Like the Texas ladies, I seldom use my oven in summer. It's 100 today! Cool

I don't cook - my husband does and he just left to go kayaking so I think that means no supper for me. I'll have to survive on chocolate.

We're having potato salad, barbecued chicken wings and cantaloupe. Potato salad is made, chicken is cooking and cantaloupe is cut and ready. A good make ahead meal. Dooley

Yesterday we were healthy - salad, veggie omelets, cottage cheese and fresh sliced tomatoes. Today we have were rather pathetic with popcorn and bowls of ice cream... heh...

Tonight we had beef stroganoff, sort of. Actually it was more like throw a bunch of stuff in a pot with some noodles and see what happens. It came out quite good, even with the wheat noodles in it. Made homemade biscuits with blackberry jam made from the garden pickings to go with it. Now I'm making a cherry pie from some of the cherries from this year's crop.

Last night was fresh corn on the cob & pork chops, night before was vegetable garden night (corn, beans, potatoes).

I suggest the Banquet brand of crockpot meals in a bag in the freezer section of the grocery store. We have had the pork and tonight we had the Stroganoff...both are really good!!!!

Tonight we are having pork chops slow cooked in a mixture of brown sugar and ketsup. I started making them this way after having stuffed porkchops at a restaurant in Fla almost 30 years ago...Really good.

Also, blackeyed peas and mashed potatoes. Yeah, I know that is two starches but for a southern girl, you can't beat that combination.

My grandsons are with us while Lisa is recooperating from a surgical procedure and isn't feeling like having them back yet. They will probably have chicken nuggest and vegies.
