Lupe's Fresh Salsa

    This recipe came from a friend ...from Mexico. It is very easy and delicious. Change the quantities to suit your palate.

    2 cloves garlic minced
    2 T. Olive Oil
    sauté until soft in a 3-4 qt. sauce pan.

    Add
    4 Tomatoes pureed. cook slightly if paste tomatoes, cook down if juicy tomatoes. remove from heat,

    Add
    4 large(16 oz. size) diced tomatoes
    1 onion diced
    2 hot peppers OR to taste, chopped fine
    1 large handful cilantro chopped or snipped fine
    1/2teaspoon salt
    squeeze of lime juice, if desired
    drizzle of honey, if needed or desired
    stir and let sit for a couple of hours.

    eat or can or freeze. if you can or freeze you can put in less tomatoes and add fresh ones when you go to use it. (Just can according to a regular salsa recipe from ball blue book or what ever book you are familiar with).

    Thanks for the recipe, I'll print it out for my oldest daughter, she loves Salsa of all kinds especially hot stuff. I don't make salsa for two reasons, I don't eat peppers and hubby doesn't eat tomatoes and without those two ingredients it really isn't Salsa anymore :rolleyes:
