Tina, I cut the flowering stems off tokeep the plant less leggy, more compact. I think the 'show' are the leaves not the flowering stalk. But just my opinion.
I use the flower for flower arrangements. If you want a day of entertainment you can watch the hover flys (actually look like a bee and totally harmless) protecting a small collection of the blooms from other insects for the nectar. If you like the plant letting it flower and it will self sew. Too many starts no worry, very easy to pull/scrape seedlings away.
