Pineapple Nut Cookies

    Pineapple Nut Cookies with
    Pineapple Cream Cheese Frosting

    Makes 4 1/2 dozen.

    8 oz. crushed pineapple (juice packed)
    1/2 c. butter
    2 c. all purpose flour
    1c. brown sugar
    1 egg
    1 tsp. baking powder
    1 tsp. vanilla
    1/4 tsp. baking soda
    1/2 c. chopped pecan

    1. Grease cookie sheet.
    Drain pineapple, reserving the juice for frosting.

    Beat butter until soft. Add about half of the flour and beat. Then add the brown sugar, egg, baking powder, vanilla and baking soda. Beat until thoroughly combined. Beat in remaining flour. Dough will be quite dry.
    Stir in drained pineapple and pecan.
    Drop by rounded teaspoon, 2 inches apart.
    Bake 375* for 8 - 10 minutes.

    Pineapple Cream Cheese Frosting
    Beat together;
    2 TBSP. soft cream cheese
    1 TBSP. butter
    1 TBSP. pineapple juice
    1 1/2 cup powdered sugar

    Those sound yummy! I love pineapple. I think I'll try these for the office Christmas party. I have most of the ingredients in my special baking hiding spot.

    They are yummy. I like them better without the frosting. I think it's to sweet.
