1/4 cup margarine or butter
1/2 cup granulated sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 cup egg or egg product
1/2 teaspoon vanilla
2 cups all purpose flour
1/4 cup unsweetened cocoa powder
1/3 cup chopped dried tart cherries
Preheat oven to 375 degs.
Spray a cookie sheet with a nonstick coating and set aside.
In a medium bowl beat margarine or butter on medium speed for 30 seconds. Add sugar, baking powder and baking soda; beat until combined. Beat in eggs or egg product and vanilla.
In a small bowl stir together flour and cocoa powder; beat as much of the flour mixture as you can into the margarine mixture. Stir in the remaining flour mixture and the cherries.
On waxed paper, shape dough into two twelve inch long logs. Place on prepared cookie sheet; flatten the logs slightly to 1 and 1/2 inches wide. Bake in a 375 deg. oven for 18 to 20 minutes or until a toothpick comes out clean. Dool on cookie sheet for one hour.
Set oven to 325 degs.
Cut each log into 1/2 inch slices. Arrange the slices, cut sides down, on the cookie sheet. Bake for 8 minutes; turn and bake for 8 minutes more or until crisp. Transfer cookies to a wire rack; cool. Makes 40 cookies.
I seem to be unable to count. If you cut a 12 inch log into 1/2 inch pieces, you get 24 pieces. If you have 2 logs that should be 48 cookies. Did someone eat some before the baker counted them? I didn't see that the pieces were supposed to be half inch and I have 36 pieces. Well, the all taste the same which is delicious. dr likes these, too. Dooley

LOL! That happens in my house too.
This looks so tasty - I'm gaining weight just reading all the wonderful recipes here.

Yes, that's how you do it. Bake the logs at 375 degs. Then let them cool an hour. Cut them into slices and then bake them for 8 minutes at 325 degs. Turn them over and bake them for another 8 minutes. They will dry a little more as they cool. They are dunkers but they are not really hard. Dooley

You are right Glenda. It doesn't matter how many pieces you cut it into, it's still the same size.
I had a hard time finding dried cherries. I found some at Trader Joe's last week. Last year I used Crasins-dried cranberries. They were tart and tasted good too. Dooley

Dooley I told Sharon when I was young a looooooooooooooooong tme ago my neighbors the Castella' grandmother who spoke only Italian made Biscotti I learned what that word meant quickly, when whe said Biscotti every kid in the neighborhood showed up. I think if she had charged for them we would have all become criminals to get money to pay for them Thanks for the memory.
