I have a really easy and delicious recipe for cinnamon cookies:
Ingredients:
300gr flour
250gr brown sugar
1tsp of fresh grated ginger
3tsp cinnamon (powder)
1 egg
-Preheat the oven to medium heat
-Mix all ingredients
-Put the dough on a baking paper and roll out until the whole paper is covered with dough
-Put in a flat baking dish and into the oven for 20 minutes or until the corners of the dough are scorched.
-immediately after taking out of the oven, cut into diamond shapes. Separate the cookies from the baking paper when still hot so they don't stick.
ENJOY!!!
They are delicious!

I do like cinnamon, yum! It's a pity no-one has invented teleportation yet as you could bake us a batch and share them around. Looks like I'll have to get off my bum and bake them myself now

Hi Rachel,
Your cookie recipe sound delicious. I will try it one day probably before the Chinese New Year. You know during this Chinese new year, we make a lot of cookies at home to welcome our guests who visit us on that day so like I say, I'm going to be very busy baking and cooking for this coming month!
