German chocolate is good for making candy because when it melts it's smooth and doesn't seem to go that horrible thick way that some others chocolates do when heated. Either that or use a good quality cooking chocolate. You can get it in white, milk and plain and it's really quite nice as long as you don't use it to thickly on the candy.
