I recently came into quite a few soft bananas. I don't have the time or room in my freezer to bake banana bread right now. Can I freeze these for later use? Do I just freeze as is, in the peel? Or do I mash it up and then freeze?

They freeze just fine - that's how I accumulate enough to make a big batch of banana bread every once in a while, by freezing the strays.
Just peel them and mash them up in a tupperware container, then freeze it. If there's still room in the container, later soft bananas can be mashed right on top of the frozen ones to add to it.

I just throw the left over singles in the freezer. I don't bother to peel them or anything! They are kind of ugly when they thaw but they bake up just fine

I freeze mine whole too. You are right Deanna, they look really ugly when they come out but work great for Banana bread. I also add Chocolate chips to my banana bread

Hi I freeze mine and when i make muffins ir Banana cake i only half defrost them so there are still ice cystalsthere and they make a lighter cake or muffins
and skin not to hard to get of

Hi everyone.
I am so glad that I decided to look into this forum.
This is fantastic. I will definetely have to implement all these new ideas regarding the banana freezing tips. I never knew that bananas could be frozen.
What we do here often is really purchase only enough bananas to fit into our eating plan. However as with all fruits, if it is not in season then we really miss them. with these freezing tips I can enjoy banana bread, banana muffins and all lovely baked banana goodies any time.
Lovely, I say.
PS, I also add chopped pecan nuts, in addition to the chocolate, to my banana muffins.
