My mom used to make these for us around Halloween. I think this may be one of the reasons fall is my favorite season Very Happy

Pumpkin Bars
4 eggs
1 2/3 c sugar
1 c salad oil
16 oz can of pumpkin

Beat till light & fluffy

2 c flour
2 tsp baking powder
2 tsp cinnamon
1 tsp salt
1 tsp baking soda

mix together and add to pumpkin mixture, blend well. Pour into an ungreased 15x10 jelly roll pan.Bake at 350 for 30-35 minutes and let cool.

3 oz softened cream cheese
1/2 c melted BUTTER (don't use margarine)
1 tsp vanilla
2 c powdered sugar

whip cream cheese until fluffy, add sugar, vanilla and melted butter and beat until well combined. Frost cake and cut into bars.

She also had a great recipe for Pumpkin cake roll if anyone is interested just pm me!
