I made this bread today to go with the fish soup that we are having. Its not a light an fluffy bread but dense an hearty for soup. I got this from the website, recipezaar. makes 2 round loaves.



2 1/4-2 1/2 cups unbleached flour
2 teaspoons baking soda
1 teaspoon baking powder
2 teaspoons salt
2 cups wheat flour
1 cup oats, plus additional for top of loaves and baking stone
2 cups buttermilk or sour milk (pour 2 T. of vinegar into a 2 c. measuring cup fill the rest of the cup with milk- let stand 5 minut)
1 large egg
my addition was sunflower and flax seeds just a handful of each.



1. If using sour milk, prepare and set aside.
2. In a large bowl mix 2 1/4 cup of the flour with the rest of the dry ingredients.
3. Form a well in the center.
4. In another bowl (or large measuring cup) whisk together the egg and milk.
5. Pour milk mixture into the dry ingredients and fold until JUST combined.
6. Turn out onto floured surface and knead the other 1/4 cup of flour into the bread being careful not to overwork the dough.
7. Cut dough in half.
8. Form into 2 round loaves.
9. Cut a cross into the top of each loaf.
10. Dust with flour and sprinkle with additional oats.
11. Sprinkle baking sheets (I prefer to use baking stones) with oats to prevent sticking and bake loaves at 350 for 30-35 minutes.

Mmmm, that looks like one I'd like to try making! Now that winter is here I like good hearty stews and homemade breads.

Netty it was so easy,, I just threw it all together an when it came out hubby ate half one loaf before it even got warm. okay i had a slice too. Embarassed but it was so so so simple to make, no yeast an the time for rising.

That's why the recipe is so perfect for me...I usually avoid recipes with yeast and rising times. I have a bread maker to do that stuff for me!

lol,,, i had a bread maker once,, but she got married an gave me grandchildren. My daughter used to make the most amazing breads, so light an tasty,, or maybe it was just because i didn't have to make it,,,lol. But it is a good recipe. enjoy!

WOW! Razz That loaf looks absolutely delicious!

I love good, dense breads - I'm copying the recipe for later,
I make lots of soups and stews in the wintertime,
and bread is the perfect side.

Sorry droopy, I'm used to both standards,, 350 F is i think like 180 C or close,, I should of put the metric in but i guess i forgot. Embarassed

That loaf looks like I could just take a big bite out of it. Either you have a great ability with a camera, or it really IS as good as it looks.

Thanks, I've copied this for later! Bet it would be good with some hazelnuts chipped in it too...
I like soda bread for the speed factor as well. The recipe I've always used adds caraway seeds. It's a little different, will be interesting to see how it turns out.
