My BF also remembers a 'cookie' called sonkake his family made at Christmas. His mom would mold them in a cupcake tin so they were formed like little cups and then fill them similarly to Krumkake 'cones'.
I found the following recipe. but I dont know if its the same as what his family made.
Anyone heard of making sonkake in a cup shape? They also didnt use almonds in theirs. Question

1 Cup Real Butter …..no substitute
1 Cup Sugar
2 Cups Flour
1 Egg Beaten
1 Cup Sliced Almonds

Drop on Greased Cookie Sheet.
Press Almonds slices into the center of each cookie
Bake 10 minutes at 375' or until edges of cookie turn light brown
Remove from cookie sheet before they cool.

I think that is sandkake. I don't make them, but I do like to eat them.

Thats sandkake. I do make those but not this year i was just to busy, since i'm the only cook for the whole season and baker. My help (friend) went home to Tønsberg for the holidays then to Spain.

Another good one Wrennie, i know those are a winner. Fill with vanillia creme or pudding or fresh fruit, and whipped creme, an i bet your BF will fill right at home. Very Happy

I guess sand could slur to or from son with the right misplaces accent. Laughing
I know he & sis were born here. Dont know if his mom was Norwegian too. But his dads side is from over there.He was just saying how mom & sis would make a ton of Krumkake and sand/son kake at christmas.
Ok off to google sandkake recipes. Since I dont need a press (about $50 that i saw online) they may be do-able!
