Cake an coffee is a tradition in Norway. I was getting a little down with no snow an lack of activity because of it. Thanks to one person on here, i would like to give the first piece of cake to him for his inspiring me to do what i love to do best,,, Cook!!! (not to mention my husband is in his glory again with me baking )

Lemon Yogurt Cake

75g butter
3dl sugar
3 eggs
1 1/2dl of yogurt, or you can use milk here
4dl flour
3 ts baking powder
1 ts vanilla sugar
2 Tbs dried an ground lemons

1 pkg of cooking lemon or vanilla pudding
1 egg

vanilla sauce, i use the pkg.

melt butter an add to sugar an mix well, add eggs, yogurt,ground lemon, an mix until well beaten. Mix flour, baking powder, an vanilla sugar, then add to sugar mixture. Mix well. You can also add some lemon essence if you desire to do so. Bake at 175 deg C for 45-50 minutes.

While cake is baking, cook the pudding according to pkg. an add one egg for a richer taste. let cool.

make vanilla sauce according to pkg directions.

When cake is cool, slice cake horizontally in half, spread your pudding, at this point you can add a thin layer of jam or nuts or dried fruits if desired,, i added some crushed almonds. Replace the top half of cake, cut an serve with vanilla sauce, and a nice hot cup of coffee, an enjoy!

Thank you all, glad you can enjoy the cake.

Droopy that recipe is on the back of the Freia baking powder can,, just change the liquid to fit what ever you want, an add any spices you like,, i use that recipe for alot of base cakes. I've made apricot glaze, pineapple, apple, blueberry, chocolate,, you name it, i've tried it.

Toni,, raising hand,, i do, i do,, please can i have that lemon bread recipe,,, i love anything lemon, an so does hubby.

Lemon Bread recipe is posted, enjoy.
It makes one pretty dense loaf and is good either with butter or just plain.
