Usually tall varieties(10 ft or more) with lg heads have one big bloom. Shorter types are multi-headed. Just keep deadheading them until you want to save seed.
Sunflowers are heavy feeders, so maybe a dose of fetilizer, compost or aged manure every so often. You can even mulch them with spoiled goat bedding if you have access to it. Don't use chicken litter unless it is aged at least a yr. It will burn the roots.
