Category: Miscellaneous garden notes and what-have-yous | Posted: Sun Aug 03, 2008 5:10 am We are currently at my brother-in-law's house in Murfreesboro, TN. I brought some of the produce from our garden, because I knew my sister-in-law would appreciate it, being something of a gardener herself. I brought about 10 grape tomatoes, and 4 or 5 romas, along with two cucumbers. Tonight we had a lovely "veggie night" for dinner. It consisted of baby red potatoes, corn, asparagus, fried green tomatoes (I brought those too, because I couldn't wait to enjoy those tomatoes!), sliced cukes, and a delicious spinach and grape tomato salad. I am trying to get the hubby to branch out on which veggies he will eat. I love them all, and I have to say I thoroughly enjoyed the veggie night tonight. I think it is nice every once in a while to have a nice simple meal with no meat to prepare. Somehow it seems like so much less of a hassle to just have fresh produce for dinner. That feast sounds great! We sometimes do exactly the same thing during the harvest season.
That meal sound just yummy to me and I bet your sister-in-law so enjoyed it just as much as you did.
Gosh, your veggie dinner sounds yummy. That would not go over big at my house.I WOULD LOVE IT,but the guys would ask where's the beef?
