Blatant begging for recipes/ideas

    I have to come up with recipes for the May Red Gate Farm newsletter, which will feature salads in the Vegetable section. Does anyone have a good, maybe great, recipe for salad dressings? I'll consider anything and give you credit for recipe.
    The salads will feature broccoli, asparagus (raw and steamed), baby lettuces, and peas. Please help!

    Mix more or less equal parts of tomato ketchup and mayonnaise, and then cut up very tiny parts (as tiny as possible) of various mixed vegetables - Mainly coriander, mint, lemongrass, parsley, and spring onions. Carrots, peas, bell-pepper, ginger, garlic, green and black olives, as well as Brussels sprouts too can work as an optional extra, (but in moderation, and again cut up in very tiny parts). Add some freshly ground black pepper too. Then mix it all together, and what you'll get will be something very similar to (yet fresher and better in taste) compared to the "1000 Island Dressing" we buy in stores!

    I by the way just saw this thread, wish I had seen it sooner - Hope my input it's too late...

    Jane, These are tried and true.



    Blue Cheese Dressing

    Put in blender
    1/2 cup blue cheese
    1/2 c. oil
    1/2 c. water
    2 cloves of garlic
    pinch of dry mustard & oregano
    After blending
    Stir in 1 cup mayo
    1 c. sour cream
    1 c. blue cheese crumbs
    1/2 cup parmesan cheese

    French Dressing
    1 cup sugar
    1 clove garlic
    1 cup oil
    1 cup ketchup
    1 cup vinegar
    1/2 cup diced onion
    Let set 2-3 days in ref.
    or 1 day at room temp.
