Eggplant overload !

    We love fried eggplant but there are just so many two people can eat. Has any one found a way to freeze eggplant successfully? Or has new ways to use them ? Have six waiting and more coming on.

    If you can sambal paste fried it with dried shrimps, it's yummy. Another way is just fried it with soya sauce. Cut it into bite size, arrange it in the frying pan and fire it up. Let the egg plant soften a little and add some butter and soya sauce and continue frying until the desired softness is achieved also yum!

    How many plants do you have? I've only one plant and it is enough for two of us. :) Oh ya you can also do curry with fish very yum!!!

    You forget KK,,I am in Texas. Most of the seasonings ect you use are not found here, But I do have soy sauce,, will try that. I have 11 plants. I planted two six packs expecting to lose a few,,only lost one this year so I have plenty of eggplants ! Wish there was a way to freeze them but other than roasting and removing the pulp I have not found one.

    Can you dry, dip in egg wash, then in crumbs then bake until 1/3 done & freeze? That way they would be ready for parmigiana.
