I love parchment paper! I use it on cookie sheets, to line baking sheets for roasting vegetables, and to keep my no-stick pans safe when I put several mini pans on one. I reuse parchment paper several times before regretfully tossing it out.

Tell me about parchment. I have only seen parchment hanging in musea. Have you guys been been raiding and cleaning out the various musea there? Is that national treasure safe, or in use in someone’s kitchen being used in cooking experiments down in TX?

No, but really. I have never heard of this. It does sound like good stuff if it can be re-used time and time again. Of course, my next question is where do you buy this parchment?

[IMG]Parchment paper is cellulose based, and comes in rolls, sheets, or bags. I buy rolls at our local supermarket, or at the dollar store. After use I fold it up and reuse it, but after about the third go around, it gets brittle and I have to toss it.

As a general manager of a big superstore in my time, on an inspection tour of the store, if I noticed anything on the deli counter that looked as if it were drying out, I'd kindly describe it as looking like that to the assistants and suggest they removed it.

yep.. its made out of cellulose. I buy mine from Sam's club which is the most economical place to buy it that I have found so far. it is manufactured in France so obviously imported. I am sure you should be able to find it there. many bakers use it. I can't imagine baking without it. look in the baking section of your grocery store if they divide items into department of use or the section that has aluminum foil saran wrap etc... IT IS NOT FREEZER PAPER so, don't make that mistake thinking it looks the same. it is not.. Or maybe ask as a bakery or order it online. I loooove parchment paper.

    Too right, Cayu.

Jane, Riley and Carolyn...thanks so much for the education. After reading your words, I believe that it must be here as well, I shall have to investigate and see what the dutch word is.
    Thanks all.

Sojerd, try "perkament". That may be parchment paper nomenclature in Dutch.

Looking that up, I immediately realised that I know the word, perkament. I did not realise that it was a form of bakpapier. I know bakpapier because we use it sometimes. Apparantly some is perkament and some not. There are also rubbish bins for offices that are made of perkament. So Jane, I think that I am getting the parchment thing now a bit. We have an ancient roll of bakpapier in the kitchen cabinet, the word “perkament” isn’t on the box though.
Thanks so much for the enlightenment. It got us on the right path.
