cucumber and chilli pickle

    300g sugar
    1 kg cucumber chopped
    500g onions chopped
    7 chillies what ever you want, I use carolina reaper
    7 cloves of garlic chopped
    400ml vinegar
    1.5 teaspoons of turmeric
    1.5 teaspoons of celery seed
    2.5 teaspoons of mustard seeds
    1.5 onces of arrowroot desolved in a bit of water.

    Method
    Except for the veg, put everything else in a large saucepan and simmer for 3 minutes, then add the veg. Bring to a simmer and simmer for another 3 minutes.
    Then bring to the boil and add arrowroot mixture stiring all the time until it thickens.
    Then take it off the heat let it cool a bit then put it in sterilised jars.
    Let it cool before putting in the cupboard When opened put in fridge.

    I'm going to try your recipe, but with a milder pepper ;). How much does this recipe make, please?

    Thank you and yes but you do get used to it. Use what ever chillies that you want, we have a bit on a baked potato with our salad.
