What's for dinner?

    From the garden influence we will be having french beans, stuffed jalapeno peppers, Bollos because I had 1 ripe cowhorn pepper, something with fresh basil and or pineapple thyme, and a dip into some fresh cilantro via that famous mix of tomatoes, onion and limon that is so addictive with chips. No idea what I am going to grill with all this yet. Which is really backwards for me.


    Well pico de gallo was too much work and the black eye peas were not ready for bollos so this was Panko tenders, and brown basmati rice with steamed beans. We almost ate all the jalapenos, sorry only had one to show.

    I haven’t had a traditional roast dinner with Yorkshire puddings for over 30 years (sigh)

    @mart I should make Yorkshire’s, I know. Last time I ate them was with my grandma from Yorkshire.

    Toniight it was hot tamales (no I didn`t make them ) and spanish rice,, I did make the rice !

    My kinda gal!

    Tonite I fixed up some leftover chicken tenders in a garlicky parmesan cream sauce and served it up over rice with fried lettuce on the side. Well it started with a fried lettuce recipe anyway. Soy, ginger, sesame oil etc. Really working the garden greens coming in. I liked fried lettuce btw. Never heard of it before.

    I like it too but you are the only other person that I have heard of that does ! How do you make it ?
    I mean the fried lettuce !

    Tonight was oven fried chicken and left over new potato salad and a mystery vegetable ! You know the kind,, you prepared it and put it in the freezer but forgot to label it ! So I added some cream of celery soup and some panko bread crumbs,, topped it with cheese and it was delicious ! Hubby even said it was good but now,, how to reproduce it ?? Ain`t got a clue !

    Last night was stuffed cabbage leaves from the garden and fresh tasty potatoes from the garden.

    I'm going to try a new recipe: roasted chicken thighs with peaches, ginger and basil. I'll let you all know how it comes out.

    When I have them leftover I blend peaches and add them to a bit of BBQ sauce ! Its really good over chicken !

    Peaches go well with chicken or apricots, also lemon with the herb called tyme.
