What Goes Around, Comes Around

    There is a lady in our apt. building that likes fresh veg. She appreciates what it takes to grow and harvest veg and fruit on a small allotment. It is because she has the understanding and appreciation that we gladly present her with garden jewels from time to time.

    Yesterday we brought her a real load of beetroot, onions, tomato’s and courgettes. She was so happy and told us to wait at the door, she turned and disappeared…returning a minute later with this:

    What a surprise! Who doesn’t like a Dutch apple pie. The crust was short and had a rich flavour. A dollop of whipped cream and I was in heaven.

    We thanked her profusely and headed up to have a little midday snack.

    There was an oddity though. Here, a fusion of two Mountain Magic toms:

    We had our little snack and had some reading time when the fone went. It was the downstairs lady. She had made us some courgette soup with salmon stirred through. It was rich and delicious.

    She felt that she had to do something back for all the veg we had given her. Tch ! What is she like. Of course we had to have a little taste right away. It did not disappoint.

    Naturally we had to exchange a coupla texts.

    That was a really lovely thing for you both to do for her, and for her to return the kindness. Kind people love to give and give back. That soup looks amazing! What a good idea.
    And a "bum tomato"....hahaha I thought crazy roots on carrots had all of the fun. ;):)

    That soup looked so delicious I've looked it up. I had no idea that courgettes ( our zucc's ) could be used in soup. I've pureed squash before, but not them. I have two left in the refridgerator...not sure how many will still come. But soup with fish will be on the menu soon.

    The soup was fantastic Sjoerd. Very subtle. The fish was excellent in it and really reminded me of a chowder. I miss chowders with my Potato allergy, so it was a real treat. Thank you for sharing!

    I used a fillet from Hubby's lake trout instead of salmon in my soup. :)

    It looks really thick, Mel. Ours was fluid, like cream of tomato soup. Of course, it’s all about the taste really., and I’ll bet yours was delishous.

    I think because I chose to only use the veg and did not add any cream. :) I cooked my zucchini, garlic, celery and onions in homemade stock and then pureed it. (I poached the fish in a seperate small pot of soup) If I had chosen to add the cream it would have been thinner and smoother....and dare I say creamier ;) I've been making my soups like that for years to accomodate some lactose and heart healthy dietary issues in the family. I don't miss the cream now ( says the woman who hasn't added cream to a soup in over 8 years hahaha - I'd probably think I'd gone to heaven if I had it now. :D)

    Thanks mate. Oh, if you could have seen the look on her face. She was so happy. She used to garden herself but now is not able physically. So I san understand why she is so happy—she knows what went into the production.
