I got these super hot chilies from the market yesterday. Because I want to make a sauce that's hotter than anything commercially available - If successful, I've decided to call it "Liquid Lava". My body is unfortunately now building tolerance to chilies. Meaning that even the hottest chili sauce available, no longer feels hot anymore, (Tabasco sauce too today taste like baby formula to me). So I require something stronger now. Seriously, these (above) don't do anything for me anymore. So I require something stronger - Damn I've started to sound like a junkie. So I looked in the fridge, and found that I have most of the ingredients to make my own chili sauce. For sweetness in the sauce, I want to avoid sugar. Instead I was thinking about adding Dates and Tamarind. And instead of water, I'll probably use lime juice. Only thing I don't have right now, is Ginger and White Vinegar. So going to get those right now. I'm not sure about Apple Cider Vinegar, as that triggers nausea in me... I welcome all suggestions from everyone over here. Please share your experiences and kitchen wisdom - I want it extremely hot, but I also want it to be flavourful too.
