Too many spuds ?

    As I said in another thread we have had near perfect weather in spite of the floods. I finished digging the potatoes yesterday. I usually do not figure how much we produce as long as its enough for the winter. But this year I actually put a pencil to it since there were so many. I use a basket from the FFA fruit that we usually buy each year but have no idea of the actual size it is.
    When full it fills a half bushel basket 3/4 full and weighs approx. 20 lbs. We have 2 rows about 75 ft long. And as close as I can figure we made over 200 lbs of mixed red and yukon gold potatoes and have a second planting in the ground. Wish I could post pics but have a problem with card and have not had time to go buy a new one since the ransom ware hit. Afraid to use the one I have because of that. Don`t want to pass it to another computer.
    Any one have potato recipes to share ?

    Oh my. I just planted our potatoes and wont see a crop until fall. I would love having that many potatoes to deal with. I would probably do a farmer market. People would love home grown potatoes.

    I was surprised to have that many but the rains just fell right this year !! Have already given away some !!

    I got a pressure cooker recently and am re-discovering potatoes. Steaming rather than boiling is really excellent for texture and keeping. I steam up a bunch and hardcook a few eggs all at the same time. Then I use them all week. Potato salad: perfect for the start of Summer! Nicoise salad with cold cooked potatoes, egg, green beans, tuna, olives, etc.. Hash with peppers and onions to go with morning fried eggs. There's a "smashed potato" fad happening. Google that, as I haven't tried it yet. If you grow leeks, you are ready to make my mom's favorite soup. I am excited for you. Happy eating!

    That's a lotta potatoes! If you can't eat or store that many, maybe you could sell them at a farmers market or do some trading for something you don't grow. Just out of curiosity I looked on-line and was amazed at the many recipes. I'm going to try some of them as they sounded really good and are different from the standard recipes.

    Oh !! I have a place to store them as well as the onions. Onions did well too after the last two seasons of golf ball size Texas Sweets. Largest one weighed in at 1 lb even.
    As for the potatoes we have a Lowes Metal storage shelf and I use those little plastic flats that the plants come in. Each shelf holds 4 flats and the shelving unit has wire racks so air can circulate freely,,there are 4 shelves. I put the potatoes in the flats by size so do not have to hunt for the size I need. Anything that doesn`t fit on the shelves goes into the picking baskets by size also. Most of those are given to friends, my vet,my doctor, the lady at the bakery ect. And if I run short our gardening friend planted 50 lbs of seed potatoes. I planted maybe 10 lbs and half of mine was seed from last year. They were ready to dig about 2 weeks earlier than the purchased seed potatoes.
    And then you always have a bunch of those marble size spuds. Those I boil till soft and smash for frying or potato salad jackets and all. They make excellent hash browns with a little minced onion added.

    This is one I want to try as soon as I have zucchini...because it sounds good and is easy.

    Zucchini and Potato Bake
    2 medium zuchinni , quartered and cut into large pieces
    4 medium potatoes, peeled an cut into large chunks
    1 red bell pepper, seeded and chopped
    1 clove garlic, diced
    1/2 cup dry bread crumbs
    1/4 cup olive oil
    Mix all above in med baking pan and season to taste with paprika, black pepper and salt.
    pre-heat oven to 400 degrees and bake 1 hour

    Thanks! I happen to have a few (understatement) zuchinni. May try that one tonight. Toss a little onion in with it.

    I think your right on the onion. Onions are added to a lot of things at my house whether the recipe calls for them or not.

    If all else fails, cook them, mash them, freeze them. They're delicious. We have three quart bags left from the 2015 crop.

    I gave away all the ones that didn`t fit in the flats. Want to keep one flat for next years seed potatoes.Will have another crop later from the sprouts I planted. Didn`t think about mashing and freezing,, they do not freeze well in other ways.

    Sjoerd, I guarantee the mashed and frozen potatoes taste great. I would think frozen hash browns might be good. I know they're sold in the market.
