I dried six. It's an experiment because I can't have a food cellar here. No point in loosing more than six if we don't like them. I don't much care for canned sweet potatoes either home canned or store bought. I'm storing a bunch in the back room where it's coolest but the time will come when what we haven't eaten will have to be blanched and dried or cooked and frozen. Anybody had luck with this?
Only way I have frozen them is mashed for pies. But I see no reaso you couldn`t pre cook till almost tender and freeze in cubes or such !! I have never tried drying them.
Oh yes, Don`t forget that the sweet potato slips are edible. If you do not use them all try putting them in a pot and in a sunny place in your house. Snip the greens and cook during winter when fresh greens are needed. I am going to do this as well.
