What's everyone canning this year?

    Netty-- I freeze spinach and chard in. Not really canning as you know it, right?
    At any rate, all of what we freeze-in we boil for three minutes, then into the ice water for three minutes and then bag and freeze.
    If we had kale we would do it the same way.

    I like the looks of that thing, Netty.
    I think that I have seen one of those , not sure though. What a beautiful thing you have there.

    Netty I have been looking at those and others similar ! Only thing I wonder about is,, these fall pears are hard as a brick and not exactly smooth ! Do you think it would work ?

    Actually gooseberries and cape goose berries are different. Physalis is also known as ground cherries for us. or husk cherries.

    I have frozen corn so far. about 30 dzn ears. I need to do greenbeans, applesauce and potatoes yet. maybe some stew and or soup. have oodles of kale I keep forgetting to pick for my markets. broccoli that probably won't be ready to take to the farmers markets but I suppose we can eat it. maybe. eggplant... umm chuck that as soon as the market is done too. I can't get my family excited about it. and lots of butternut squash. I could feed all of you and have it left over. lots of raspberries coming on and I will pick and put some of those in the freezer and make jam yet. I might do some tomatoes. but honestly nothing much now until October for me. I have 3 more farmers market weekends for the year (6 markets as we do 2 every saturday) and I am done. I will clean up the garden and do my canning as soon as I am done running for the markets.I am tired. it has been my busiest year so far. more new customers at my stand in the past month than all of last year I think

    I will freeze stewed tomatoes. That's it. But I do have enough onions potatoes and garlic to last most of the winter.

    Mart - I think you should be fine with hard pears. As long as you have the strength to get the pear onto the 'holder' on the peeler it will work. I have had issues where things are too ripe/soft and just spin on the holder so hard is better in this case.

    Well,, not in this case Netty ! I bought one of those and although the first one did great,, the others did not so I will save the peeler for apples !

    Oh dear, your pears must have gotten too soft. I tried to use mine to make zucchini noodles but the inside was too soft too.
    Does work great for apples, and I've done potatoes for canning with it too.
