The Fumbling Chef at it again

    Since toni posted her pumpkin cookie recipe here I've been screwing up my courage to try it. Well, I bought that pumpkin, didn't I, and I don't like to throw away food. I'm awful in the kitchen unless I'm making something I've done lots of times before, and besides I really don't like to cook. :-|

    Anyways, we started by digging out all the spices and other ingredients. For shortening I used margarine.

    My 7-year-old volunteered to mix the ingredients. Is the dough supposed to look like this?

    Then I set the cookie dough on the plate using a spoon. I either used too little flour, too big a spoon or should have used an extra plate, since this is what it looked like :D

    I shall have to add that the taste is great, and I'm making a new batch tomorrow. Double the size, since these cookies probably won't make it past midnight. Thank you toni, very much! :D

    (Oh, I figured out that 1 cup is about 2 dl. The recipe doesn't look that scary anymore.)

    Looks like too little flour or possibly the pumpkin needed to have been drained, the batter should have been thick enough to stay in a rounded shape until it flattened out a bit when baked.
    Also, did you use the margarine softened or melted? It should be softened, melting will also make the dough runny.

    But you must have done okay if they tasted okay. ;)

    I made mine soft into bars. They really taste great however you do it. dooley

    The marge was a bit on the runny side, toni, so that's probably it. The pumpkin was well drained. I'll try and do better tomorrow.

    There's one piece left now, but not for very long. :D

    Well I got here too late it seems as all those cookies are gone. Make an extra BIG batch today Droopy as I may pop in for a cuppa and to be your tester!!! :D :D

    I'll make more this evening, promise. :D I don't think I'll be making a pie since these cookies sort of flew off the tray. Not unless I buy another pumpkin.

    That's my thought exactly glendann. :D I used to love my mother's mistakes, because I got to eat them. The successes were always saved for later.

    KG, actually the recipe called for 1 cup of canned pumpkin. But since I buy the pie pumpkins in the fall, cook and freeze the pulp I always use the uncanned stuff.
