Blackberry desserts

    We picked a large bowl of blackberries today, they are all ripening up so fast and grow wild all over the place here. I am smelling a wonderful pan of our favorite cobbler to use with berries, and thought I would type out the recipe for you while it bakes.

    Somersault Cobbler

    1/4 to 1/2 cup sugar or fructose
    1/4 cup butter or margarine

    1/2 c. milk
    3/4 cup flour
    1 tsp. baking powder
    1/4 tsp. salt

    3 cups berries or fruit
    Sugar to sprinkle over
    A little butter to dot with
    3/4 cup boiling water

    Cream sugar and butter. Combine dry ingredients and add alternately with the milk. Mix well and pour into a buttered 8x8 inch pan. Top with 3 cups of berries or fruit. Over it sprinkle 1/2 cup sugar (less for sweet fruit, more for sour - up to 1 cup for sour cherries). Dot with butter. Pour boiling water over all.

    Bake 30 minutes at 400 degrees.
    You can double it and bake it in a large casserole and it works great too. This way there might be a little spoonful left over in the corner for you after all your hungry friends have had their fill.

    They are a real pest around here, we have to kill them all the time or the entire state of Oregon would be one large blackberry bramble, I swear... But the flipside of it is we get such sweet berries, all you want for free every summer.
