I just kind of made this up for our 4th. of July b-b-q last year & people loved it. Several people asked for the recipe. Here it is: - 1 package of white cake mix ( or make your own from scratch) - 3 fresh, ripe mangoes; sliced - small ( 4 oz.) can or bottle of mango nectar -small jar apricot preserves -1 pint heavy whipping cream Set oven temp. according to directions on your cake recipe. Mix cake batter & pour into a greased & floured 9 X 13 pan. Bake according to directions.Completely cool cake. Put cooled cake on your serving platter & poke the top full of holes, with a shish-kebab skewer ( or the like). Spoon mango nectar over the cake & let it absorb ** don't put on so much nectar that cake becomes soggy; just enough that a little soaks into all the holes you made. Now put mango slices on top of cake, making sure to cover all the top, so no cake is showing. Put about 4 Tablesps. apricot preserves in a small pan & heat just barely enough to thin it out. Brush thinned preserves over top of cake. Chill cake thoroughly & before ready to serve, whip the cream with a bit of sugar added, then pipe it onto sides & around top edges of cake, leaving center open so you can see the mango slices.Makes a nice, refreshing summer dessert.
