Got Mint? A Dairy-free mint chocolate chip faux-ice cream

    DH is allergic to milk, not intolerant, so I need to be very careful! A slight exposure leaves him with a seriously ugly sebasceous excema on his face, I try to be careful but something always falls through the cracks, which usually happens when he has to look his best at work.

    This is also good for vegans just omit egg whites and tell them the soybeans did not suffer when made into soymilk.

    I made this recipe from many trial and errors. It tastes a lot like the mint chocolate chip SoDelicious makes.

    cris's mint tofutti

    Blend:
    several bunches of mint
    3 egg whites (pasteurized kind)
    1/2 block tofu (silken soft)
    1/3 cup white sugar
    soy milk to 2 cups total
    -refrigerate

    Blend:
    1/3 cup turbino sugar
    2 cups soy milk (I use very vanilla silken soymilk, DH likes it sweet!)

    add two together and blend, put blender into fridge until very cold! 2 hours min.

    Add to frozen bowl of ice cream maker

    After 5-10 minutes when thick add chocolate chips (I don't measure, just add)

    It won't be a bright green but it will be killer mint! I use dark mini chocolate chips.

    I only have a standard electric ice cream maker, but sure want to give this a try. My mint is chocolate mint, guess that will work?

    A regular ice cream maker should work fine. In fact, you can probably make a larger quanity! I also often leave out the egg whites but since I had some in a little carton I used it. I have also left out the tofu... one time I used some irish coffee flavoring.

    It will separate a little in the fridge, so I keep it in the blender container and blend it a bit before adding to the ice cream maker.

    that sounds yummy! I use a lot of mint and mini dark chocolate chips. I saved the little plastic cups from the Italian Ices I buy. This recipe filled 7 cups, DH ate one a night and is now wanting more... but he drank all the soy milk LOL
