Canned Up Bacon And Lemon Juice Today

    13 pounds of bacon waiting to go into the canner. It will go into 6 quarts and cost is $2.00 a pound.

    I canned 21 half pints of lemon that we paid $2.00 for. I did the same thing in the Spring. It's all gone. So now I am out looking for good prices on more lemon and limes. I figure I can use 500 lemons and 500 limes. That will last me till next August. We use our lemon and lime in ice tea, allottt....

    That's amazing Barb! And here I was all proud of myself for canning up 4 jars of garden tomatoes today! So do you cook the bacon first?

    Netty, I lay my bacon down flat on a cookie sheet on 400 degrees. Watch it every 2 minutes and drain each time for about 15 minutes. It's not done yet but it is then layered on paper towels till I am done baking all of it. Then I, of course, sterilize wide mouth jars. I then roll the bacon in parchment paper so they doesn't stick to each other and slide it into the jar till it is full.

    After that, I pressure can the quarts for 90 minutes, that's 1 hour and a half, :D I am told because I am at 1001 feet above sea level.

    So it isn't totally cooked but I have done it all the different ways. I like it almost done for the hubby microwaves his breakfasts at work and finishes the cooking action.

    So Netty, Do you peal them and can them whole or make sauce from them? Please tell me? I love hearing what others do with these things. I am growing 80 plants to make whole canned tomatoes this year. I will take out as much water as I can. I can that separately so I can use it to boil rice instead of water.

    Bacon my favourite meat, this is the first time I heard of canned bacon, very interesting, what a convenient way to store for a quick breakfast or snack.

    Barb do they need to be stored in the refrigerator after canning?

    KK, If the jars that you process seal, you do not have to put them in the refrigerator. When the fat gets cold in the jars it looks quite ugly. When you heat it up after opening it really is good. I only have about 10 jars on the shelf at the moment. I need more while I can still get it at this price. I buy smoked slab bacon, take off the skin and slice it on Big Bertha.

    That's what makes it cheaper. At the grocery stores is around $6.00 at the moment and it's going up.

    I am only kidding Sweetie.

    I still have some seeds. They were the ones that turned very maroon red. They are so very nice.

    I will plant the remainder of them for Spring planting 2015. I love them.

    :D :D No no. I sit at times and make a list and get the jobs done. Sometimes the jobs happen all at once and I have to put 'self' in high gear. That is not the usual feelings in the body.

    I like to do a few things a day usually. That is small jobs. Like I didn't get the wax beans canned today. I will do that by tomorrow night.

    Can't do everything in a day.......

    Barb I peel them and then can them whole. I had so many tomatoes that I needed to do something, but it only made 4 jars! One didn't seal as I tilted it as I pulled it out of the water bath so I'll be making some sauce with it. This is my first time canning tomatoes.

    Congrats Netty. Bet that feels good canning for the first time. Always remember to follow the rules.

    I love to read and learn safety rules and to learn what others do. I believe that whatever anyone does, they should learn by the basic rules. Once they have learned the task very well then they can go off and bend the rules. You can't bend the rules at the get go. That's when anything becomes dangerous.

    Today I have a few jars of wax beans to put up.

    I sure am amazed at your work. You really to do things on a much grander scale than I. Chapeau!

    It looks like you are doing some processing of one sort or another each day now. Me too, but I am reaching my maximums on the various veg sorts.

    Looking forward to seeing what you will be getting up to next.
