Seriously, there needs to be an Olympic event my wife can enter whereby contestant hurl overmature squash onto a compost pile from a distance. It breaks my heart to lose them. I am working on a roux or reduction idea because she throws out my overbig okra with the precision of a knife thrower. Surely besides seed these mature lovelies can find some good purpose?
The overgrown Zucchini can be used to make Zucchini bread. Also cut into it to decide if it's tender enough for breading and frying. Possibly an addition to soups? WE grated some for freezing last time we grew it. It will make a great addition to the compost heap.
Our daughter has made a big pan of zuccini lasagne out of 1/2 of one of them! She grated & froze the rest. BTW the lasgne was delicious!

wow, how awesome. .. we have a zucchini contest tomorrow.. can you enter one of them? mine are struggling. I have one I left out there for several weeks and it looks puny compared to yours.
I didn't pick any veggies for two or three days and yesterday had about 2# of cherry tomatoes to harvest! These veggies will overwhelm you if you're not picking regularly. I would hate to see what a week away would end up with!
That is a joekel, as we say here! Over-sized, but useable none-the-less. Big courgettes are good to fill with hamburger mixed with spices and covered with melted cheese (or crème fraîche), courgette cake or 1001 other things. hahaha. We give the ultra big one to the deer in the park adjacent to our home. We cut it up for them and they seem to love it. What a good idea of your daughter...however the in-freezing process may well yield very soft grated product. Having said that, if you use it in a stir-fry or something like that, it will be a good addition.
