I just bought a butternut squash. Now I am looking for an easy and healthy recipe. Can anyone suggest a recipe that is not difficult for a bad cook who still needs help boiling eggs (thank goodness for the internet). I have never eaten or prepared this vegetable before. Please include instructions on how to prepare the vegetable. Do you remove the skin like when you peel a carrot using a carrot peeler or do I need to buy something special??? Thanks in advance, Luis
i can tell you how my mother prepared them and also same recipe for pumpkin ! no need to peel,, just wash, remove seeds and quarter them. then sprinkle with brown sugar, cut side up, add a dot of butter and bake till tender 350 degrees for 30 to 45 min depending on size ! just eat out of the peel ! you only need to peel if you are making soup ect,, there are many recipes online for that.
I think it is not a large one: 10" tall if standing.The circumference at the top is 9" and at the bottom, it is almost 14". Based on that, about how much in inches would a sliver of butter need to measure in order to be considered a "dot of butter"?
I would say about a 3 inch square but it is not critical ! if you like more its fine ! if you are watching cholesterol one pat of butter is fine or use the 0 cholesterol stuff ! i use bluebonnet which has 0 cholesterol but good flavor ! the squash done this way goes well with a grilled pork chop or pork loin chop !
I washy my squash first... always wash your fruits and vegetable before cutting them. I cut these in half lengthwise clean out the seed cavity and lay them cut side down on parchememt paper (as its much easier to clean the pan afterwards) and bake at 350 for about 40 minutes or until a knife pokes easily through the thickest part. then I flip them over make a few slices and slather on some butter, sprinkle with brown sugar and cinnamon and serve. I let people cut the amount they want from the serving dish. if you don't serve all of it an you have left overs you can make a squash pie instead of pumpkin or a squash casserole... instead of sweet potatoes use squash. https://www.foodnetwork.com/recipes/food-network-kitchen/sweet-potato-casserole-3364945
either way is easy,, just sort of going by a meal for one person and someone learning to cook ! figured everyone knew to wash vegetables ! I just wash my sweet potatoes and bake in the peel ! then just slice open like a baked white potato and add butter ! i always bake more sweet potatoes than needed ! when cool completely just store in plastic container on the counter for a day or two ! then the sugar sort of caramelizes and makes a nice snack with no sugar added !
I put some oil on the inside part, plus salt & pepper, before baking at 350 for about 40 minutes.Then butter, brown sugar and cinnamon in that order. Will probably use more of those last three next time as I had no idea how much to use and could not sense much of their flavors. Instead of butter, I used Smart Balance. The next experiment will be another vegetable that is similarly shaped and whose exterior skin is dark purple. The name escapes me. A lady from India that I met a year ago told me a recipe she used but, I forgot the instructions and never saw her again. I need to get clearance from the Fire Department to cook that though. Hee, hee, hee.
oh,, that is excellent ! slice in about 1/2 inch slices and lightly salt the slices discarding the end about a half hour before cooking, no need to peel just wash ! dip in either milk or egg wash, then dust with cornmeal and fry on medium heat and small amount of (canola) oil 3 to 4 minutes per side or till desired golden brown color ! turn about halfway through ! i love fried eggplant ! canola oil has no cholesterol !
Thanks for recipe but I am not much into frying as disposing of the used oils is a pain. But thanks anyway!
You can also bake them @375 for 15 to 20 minutes ! just oil the pan lightly and turn halfway through !
