Going to try to do a bunch of herbs this year. Just started Oregano, Thyme and Rosemary yesterday. Also plan on doing Sage, Cilantro, Parsley, Mint maybe a few more. Any suggestions ?
May I suggest marjoram? It tastes like a milder form of oregano, and is used in many Mediterranean dishes. It is also perennial, so you can let the plant grow and spread. No basil? There are many types of basil, but I prefer the "gigantum" which has large leaves and a less sharp taste. We'll discuss herb preservation later!
Oh yes, tarragon!!! Here in Texas we grow the Mexican tarragon (tagetes lucida) because the French tarragon just curls up and dies in our heat. The Mexican variety is actually in the marigold family, but tastes almost exactly the same as the French. Fish with a tarragon sauce, tarragon butter, whole leaves lightly added to a salad, oh, yum!
Try to ficus on the herbs you like to eat. Some are, well terrible, in my opinion of course. This will give you room to try new ones to cook with, like lavendar for lamb.
Definitely basil. Mint is a good one. I also plant dill, chives, tarragon, parsley, rosemary, oregano, and fennel. I think the above suggestions cover them all
