I've been growing sprouts like this for many years now. Far less expensive than buying them in packs which go off after a couple of days.

    Mr. Fothergill's Mung Bean

Classically crunchy bean sprouts. Ready in just 5 -6 days.

    Key Information:

    • Quick and easy to grow (All year round)
    • Nutritious 'superfood'
    • Large, crisp and crunchy succulent bean sprouts
    Advice & Tips:
    • Sow indoors all year round
    • Wash the seed to be sprouted in cold water, soak for 8 hours prior to 'sowing'
    • For sprouts use either a jar which can be covered with muslin or a clean cloth, or use a seed sprouter.
    • Place seeds in jar and cover with a cloth or place in a seed sprouter.
    • Thoroughly rinse the seeds with tepid water at least twice a day and drain.
    Useful Information:
When to sow All Year Round
Where to use Vegetable Garden, Flowering Plants, Beds & Borders
    When to Harvest: 5 - 6 days

I found this for you @mart . The video shows the mung beans germinating on a damp towel on a tray and covered with the end of the towel and another tray to keep them in the dark.
Something I intend to do shortly - didn't even give this crop a thought before the very useful suggestion posted above !

@mart , I understand you could use soy beans to do more or less the same job.
