I was feeling lazy today @Sjoerd .....but it was a supposedly healthy Spinach one....not too sure the same could be said of the chips ( fries). Your Leek Casserole looks utterly scrumptious...I must try harder.
I'm cooking a HUGE sweet potato. So big (9"long and 2 1/2" wide )that I had to cut it in half length wise !! I have the 2 halves wrapped in aluminum fail in the toaster oven. That's all I'm having because I love them mashed up in butter with salt and papper.
Oreti— ta. It was too… this dish is one of my favs, anñnnnnnd made with our own veggies. Oh, I like chips from time to time. I do not eat them often, and therefore when I DO eat them, I really, really enjoy them. Annie— that sweet potato sounds really good to me. I have had them over there— a sort of purèe with marshmallows on top. Oh, your posting brings back memories.

I like a little bit of mild Peri Peri on my tuna salad. I just made a big can of tuna into tuna salad and had a tuna salad sandwich on toasted bread for lunch. .
Just the usual, Thursday and Sunday dinner. Rump steak, chips and asparagus. I've got it down to a fine art on our Ninja air fryer.

I and a friend went out for early Christmas dinner to a Chinese Buffet in the big town called "Chow Town". It was FABULOUS!! She likes suchi and they had about 30 different types. I had the seafood: shrimp, crab and lots of other side dishes. They had something on a 2" wide broiled green pepper. I don't know what that paste on there was but I loved it !! Must've had six or seven pieces .
Dinner was home made Tamales. That was my New Years resolution - learn how to make them. It wasn't nearly as difficult as I thought, although it did take quite some time. The filling was just canned chili. I didn't want to take a chance on making a difficult filling until I learned how to make the masa. I drained the chili in a sieve so it wouldn't be too soggy. I cooked them in the Instant Pot. 20 minutes on high pressure. Now I know how. I will work on a different filling and being more consistent spreading the masa on the corn husks, next time. Not bad! I haven't had tamales in ages!
Started the sauce/gravy (depending on the point of view you take) for tonight spaghetti and meatballs. I make mine with canned tomato puree and paste.
I'm having either beef stew or beef and barley soup. Haven't made up my mind yet but definitely something warm and beefy !! Baby it's suddenly cold outside !!
