Anyone growing parsnips?

    Anyone growing parsnips? I have a nice bed of them so far. And the critters don't seem to like them. :-D I just read all I have to do is dig them after frost, slice them and freeze. So I'm just double checking with the my tried and true gardenstew experts. Also any recipes for them would be great.

    OH, peeled, sliced and pan fried in butter until they are browned...mmmmmmm mmmmmm! with roasted vegetables, in stew....I love parsnips!

    I grow parsnips at work for the chef. Last year I was done work before the killing frost got to them - they taste best after a frost - and so I left them in the ground. This March when I went back to work I pulled them and took them to the chef. He was most impressed with them, so I'm doing the same thing this year :D
