I found a couple of recipes for you. Hope they're what you were looking for.

    PICKLED BANANA PEPPERS

Cut hot banana peppers into 1/4 rings and pack into jars. (Rubber gloves should be used in handling the hot peppers.) Mix solution of:

    2 c. vinegar
    1 c. sugar

Add about 2 tablespoons of mixed pickling spices tied in a small bag. Boil for 3 minutes. Remove spices and pour boiling solution over the peppers. Seal in jar immediately. (Sweet banana peppers may be used or mixed with the hot peppers.)

    OR

    PICKLED BANANA PEPPERS

    peppers
    garlic
    dill
    1 cup pickling salt
    1 cup vinegar
    1 gallon water

Wash peppers, make a slit in the side of each pepper. Alternatively, cut in half and remove seeds. Bell peppers can be used instead; cut into strips with some jalapeno added for zip.
Pack in sterilized jars. For each jar, use one clove garlic, one bunch dill or one teaspoon dill seed.

Bring pickling mixture to boil, pour over peppers and adjust seal. Process in a boiling water bath for 10 minutes. Tip: Heat jar lids before using for best results.
