Dilly beans

    Does anyone have a really good recipe for Dilly beans? Maybe something a little different then the normal

    I am one of those who never heard of Dilly Beans...pickled string beans, I had to look them up ;)

    What is your recipe? From what I have read they are much like making dill pickles..but using the dill seed instead of the weed.

    Spicy Dilly Beans (Makes 5 pints)

    3 pounds green beans
    2 1/2 cups white vinegar
    2 1/2 cups water
    4 tablespoons pickling salt ( I use kosher salt)
    5 medium garlic cloves
    5 teaspoons dill seed
    5 teaspoons red chili flakes

    Wash and trim beans to fit jars.
    Pack jars, leaving 1/2 inch for headspace. Add 1 clove garlic, 1 teaspoon dill seed and 1 teaspoon red chile flakes. ( I use a whole dried chili pepper)
    Combines water, vinegar and salt and bring to a boil.
    Pour brine over beans. Use wooden chopstick to work air bubbles out of jar. Check for headspace again and add more brine if needed. Wipe rims. Apply lids and rings and process in hot water bath for 10 minutes. Let sit at least 1 week before eating.

    Donna S, I have done them before but didn't save the recipe. I have yours saved. It sounds good.

    Never heard of them either. But I love green beans... so I'm sure I'd like them.

    I make them every year but just make my own recipe.
