An acquaintance was raving about the garlic flavored olive oil she bought at a trendy little gourmet shop. At $3.99 for a few ounces, it was pretty expensive! I told her about making garlic infused oil, and gave her a taste of ours. She loved it--better than the expensive stuff! Here is how to do your own: Garlic infused olive oil 1/2 c. extra virgin olive oil four cloves of garlic, crushed (I put ours through a garlic press and then saute the bits to store in the oil and add to the dipping oil) In a shallow pan (small saute pan) heat the oil on medium heat, and add the garlic. When the garlic starts to brown but not burn (about 10 minutes) remove from the heat, cool, and if using crushed cloves remove them. Otherwise, put the oil and pressed garlic in glass jars when cooled. This stores in the fridge for a month, although ours has never lasted that long!
