Way to go KK ! Very nice. I put the baby greens in my salad mix and cook as greens when older. You have several ways to eat the whole plant. How do you cook the root ?

Thank you all, I guess they will be ready for harvest by next week.

Mart I like the beet root boiled, sliced and in salad which I learned when we were in UK. Yes the baby green also goes into the salad. The older leaves are roasted with olive oil and salt ... yum. Sometimes we had the beetroot roasted in the oven or just over an open fire, sometimes Becky makes a cake ... so many possibilities.

Well Sjoerd, I got the new pack from my eldest daughter and on its packing it just mentioned that it is beetroot. Chioggia sounds interesting, will give it a try if I can get my hands on it. :)

Your beets look great and are so good for you also. I like mine boiled with butter or pickled in sweet/sour vinegar.

Thanks Philip, we have the same taste, I don't like those in the jar with vinegar too!

Thanks 2ofus, boiled in butter sounds good ... I think I should try it :).

Try this,,. Boil then when done slice, add a small amount of vinegar ( about 1/4 Cup to three or 4 sliced beets with cooking liquid), same amount of sugar or to taste,, heat to steaming then add several pats of butter and swirl in pan with beets till melted. Serve warm as a side dish or cold in salads. I have even added a pinch of cinnamon, clove ect occasionally for a unique taste. Pairs well with pork or chicken.
Most prepared beets are canned with too much vinegar, Needs to be a balance.
