    Cajun, saying that you put leftover ham in a pot of beans is like saying Julia Child was a pretty good cook. You are the master of understatement. That looks delicious!

    Cappy, you mentioned adding 'your own homemade cajun spice' to this pot-o-beans in your blog post...
    I'm wondering if you might share the recipe for that??? Fully realizing that it may be Family-secret, proprietary and have commercial value...

    It's our own blend of common Cajun seasonings and we make it to insure it is not contaminated with gluten on acounta Peg is a celiac I will tell ya that it is very simular to Tony chachere's only more spicy and not as salty. That is the one we recommend to most folks. It is available every where. We took his original seasoning greatly reduced the salt and rebalanced the other seasonings to our taste. I don't share the recipe cause it is to our taste and ya never know we may do something with it one day.
