I got these super hot chilies from the market yesterday. Because I want to make a sauce that's hotter than anything commercially available - If successful, I've decided to call it "Liquid Lava". My body is unfortunately now building tolerance to chilies. Meaning that even the hottest chili sauce available, no longer feels hot anymore, (Tabasco sauce too today taste like baby formula to me). So I require something stronger now. Seriously, these (above) don't do anything for me anymore. So I require something stronger - Damn I've started to sound like a junkie. So I looked in the fridge, and found that I have most of the ingredients to make my own chili sauce. For sweetness in the sauce, I want to avoid sugar. Instead I was thinking about adding Dates and Tamarind. And instead of water, I'll probably use lime juice. Only thing I don't have right now, is Ginger and White Vinegar. So going to get those right now. I'm not sure about Apple Cider Vinegar, as that triggers nausea in me... I welcome all suggestions from everyone over here. Please share your experiences and kitchen wisdom - I want it extremely hot, but I also want it to be flavourful too.
@S-H , you're not tasting the chillies as strong anymore because you're burning your taste buds up !! IMHO.
Ladies, it's the 1st of December, not 1st April! But I'll admit, you both almost got me with this practical joke! I checked with Google, and it confirmed what I already knew - No you cannot burn off your taste buds by eating too many chilies. The body simply builds a tolerance to chilies over time. Before checking with Google, I already knew that my sense of smell is still perfectly intact. And since smell and taste are interlinked, only proved to me that there was no permanent damage. Body has only built up a tolerance for chilies. But yes, you both almost had me. Now let's get back to making the sauce.
Neither one of us said permanent damage. . My DNA revealed that I do not taste bitter things much. I can tolerate bitter things because I have fewer taste buds for bitterness than others do. Maybe you've nummed your heat receptors then !!
Just by chopping up my hot peppers I start gagging, become short of breath and have to run outside for air But they are awesome when cooked in food. More power to ya MacGyver.
Yes, that's what I want, something equaling to (if not exceeding) pepper spray - That the moment I open the bottle, everyone at the dinner table starts screaming and runs for their lives. As if nerve gas has just been released.
All I can do is wish you good luck then @S-H , I hope you get the burning kick that you're yearning for.
Thank you! I now have white vinegar, and also got some soy sauce too, (which I'll add in place of salt). Also got pickled jalapeno and mayonnaise. In case I decided to make a firey version of the thousand Island dressing. Experimentation starts from today! If successful, I'll now name it Nuclear Magma - And soon seismic stations worldwide will register another detonation from my part of the world...
