Looking for green tomato mincemeat recipe

    Anyone have a really good recipe for green tomato mincemeat? I would like to can some this year. Mincemeat pie is one of Rich's favorites.

    Donna, this recipe is from a 1930's Ball Blue Book. I've never made it, so I can't vouch for it. However, here it is!

    Mock Mincemeat (Green Tomato)

    1 peck green tomatoes, chopped
    3 pounds brown sugar
    2 pounds raisins
    1 c. suet
    2 tblsps. salt
    1/2 c. water
    2 tsps. ground cinnamon
    1 tsp. ground cloves
    2 tsps. nutmeg
    grated rind of one orange
    3 cups chopped apples (optional)
    3 lemons--pulp and juice only

    Chop or slice tomatoes, sprinkle salt over and let stand for one hour. Drain and discard juice. Cover with cold water. Place on stove and boil for 5 minutes. Drain off liquid, add suet and 1/2 c. water, return to stove and simmer 20 minutes. Stir in sugar and boil until dissolved. Add other ingredients and boil rapidly until thick (about 20 minutes). Pack into sterilized jars and seal immediately.
