MICROWAVE DIVINITY

    3 c Sugar
    1/2 c Light corn syrup
    2/3 c Water
    1/4 tsp Salt
    1 Egg white
    1/4 tsp Vanilla
    1 c Chopped pecans (or any nuts you like)

    In a 3-quart glass bowl, microwave sugar, syrup and water on FULL POWER for 12 to 18 minutes, or until mixture spins a fine thread. In another bowl,add salt to egg whites, beating constantly until whites are stiff and form peaks. Slowly pour a thin stream of syrup mixture into egg whites, beating constantly until mixture loses shine and thickens. Stir in vanilla and nuts. Immediately drop by teaspoonful on waxed paper. Very easy and almost never fail.

    Really?!? Full power for 12-18 minutes, sounds like it would ruin it for sure!!!

    Who would've thought you could make *that* with a microwave? I was thinking that too - it sounds so long, like it would just carmelize and burn, but I may try it anyway... Hm....

    I tried these this morning GF. I was almost biting my nails in case the microwave blew - but it didn't!!! :D They look delicious. I'll maybe just try one .................. :rolleyes: :D :D

    I think I didn't beat my eggwhites enough, or something, as I have a huge pan of sticky not-stiff-at-all sugar sludge! OK, ALMOST never-fail! Shall try again when I get another sack of sugar.
