Can be fresh or frozen, but defrosted
    8oz redcurrants
    8oz white currants
    8oz black currants
    8oz pink currants
    8oz gooseberries
10oz sugar or more if you like it sweeter
1oz of arrowroot for thickening dissolved in a bit of water to make it runny.

Put all of the fruit and sugar in a pan bring it to the boil, let it boil for a few seconds then add the arrowroot mixture, keep stirring until it becomes thick, don't over do it or will lose the thickness.
Pour into a bowl and let it cool.

I use it as a topping to puddings, even on my porridge with all the fruit on top, then the compote.
    Great with ice cream

    That looks delicious!

My mom used to make a fruit compote, raspberries, peaches, plums. It was good over ice cream.
